Sugar is considered as an integral part of the human diet and found, depending on the region, in many staple foods. It is processed in almost every food category.
Until the XV century, sugar was a rare spice that few had access to. With the colonization and first experiments with the plant, took only 50 years (1424 to 1475) to became the biggest European supplier.
My dedication, knowledge and pride in my roots gave me the tools to design a tour where you will understand the role my ancestors had to the borders we have today.
Sugar was disputed, traded, originated conflicts, took nations to richness and poverty and people to greed and gluttony. If you think about sugarcane, it is a plant that suffers a lot. Chopped, crushed, ground, squeezed, beaten, pressurised, no matter what, it will always provide a sweet outcome and if you simply leave for a couple of days, it will ferment and if you distill it, magic will happen. Mix that magic with lemon/orange and honey and you have Poncha.
